Intro & Summary:
Today’s guest, Dr Stephen Hussey has been eating a strict carnivore diet for 6 months now, and he said he feels amazing! A growing number of people are turning to the carnivore diet, a meat and/or seafood based diet, to address mental disorders, joint pain, skin disorders, and most commonly to find the resolution of autoimmune diseases.

Dr. Hussey was first on our show, episode #40 to talk about Ancestral Health and his new book “The Health Evolution: Why Understanding Evolution is the Key to Our Health”.

Dr. Hussey is a Chiropractor and Functional Medicine practitioner. He attained both his Doctorate of Chiropractic and Masters in Human Nutrition and Functional Medicine from the University of Western States in Portland, OR. He is a health coach, speaker, and the author of two books on health;
The Health Evolution, and his ebook called
The Heart: Our Most Medically Misunderstood Organ.

How The Carnivore Diet improved his life
- His cat allergy is gone, symptoms and blood-work confirmed
- GI issues like bloating/pain resolved (zero GI symptoms whatsoever now)
What does he eat?
- Skips breakfast (intermittent fasting)
- First meal around 12:30, bone broth made from bones, meat, salt; eats with can of sardines, small steak cooked in beef fat (suet)
- Dinner is eggs with bacon, small steak, liverwurst; occasionally salmon roe
- Occasionally he has chicken or pork instead of beef
Do you need antioxidants from plants?
- the body can manufacture all the antioxidants you need if you eat the right foods
- bone broth and collagen help balance glycine and methionine for healthy glutathione antioxidants in your body
You can have too much protein
- eat fattier meats
- cook with animal fats
- eat salmon roe and fatty fish
Fat fuels the body and does not increase blood sugar or insulin (hugely important for diabetics)
Does lack of variety negatively affect the Microbiome?
- do you need fiber?
- the protein turns into short-chain fatty acids like a by-product of fiber digestion in your gut
- protein tolerance is higher with a low fiber diet
Should you be eating Raw animal products?
Is an animal-based diet what made us human?
- the more carnivorous we became in history, the more successful we became
- humans can “survive” on an omnivorous or plant-based diet, but that is not ideal
- if today we have the choice to eat the most optimal food, then why risk the plant toxins?
Dr. Hussey does not necessarily believe this is the diet for everyone
- for some people it could help with autoimmune condition, or psychiatric condition when no other intervention can
What happens when he eats plants for the first time?
What about the social aspects of being on an extreme diet?
What changes will occur in bloodwork after Carnivore?
- Hussey’s A1C blood sugar test improved to optimal levels
- IG-antibodies went down
- Inflammation “C-reactive protein” went down
- Cholesterol went high but it’s okay (more on heart health and cholesterol in October 30 episode) but his HDL and Triglycerides are optimal
- “lean mass hyper-responders” have higher cholesterol but get sick less often
- white blood cells reduced which seems to be a good thing
Environmental Concerns & Myths Addressed
- statistics show that agriculture contributes 9% of greenhouse gasses, plant agriculture is 5% and animal is 4% (2% is cattle), transportation is 30% and energy production 30%
- plant agriculture destroys the soil after farming without sustainable methods
- animal agriculture, with proper farming methods, can help reduce greenhouse gases and replenishes soil.
- sourcing your food locally is the best thing you can do for the environment (difficult on a vegan diet based on geographical challenges)
- carnivore diet helps reduce food waste and is incredibly sustainable for the above reasons
- approx. 2/3 of the land on our Earth is not suitable for plant agriculture, and most of the world needs livestock for farming
