    20 FEB 2021 · I had the delight to sit down and discuss Sandor Katz’s new book and its relevance to this current times: sanctuary, emotional availability, boundaries, and the efference of social-cultural fermentation. You can find everything about Sandor’s work at wildfermentation.com. For those of you that are just meeting Sandy, as I know him, he is fermentation revivalist living in rural Tennessee. Sandor is well known for his best selling books Wild Fermentation and The Art of Fermentation. As long as I have known him his enthusiasm and passion for fermentation has been completely contagious. "In Fermentation as Metaphor, stemming from his personal obsession with all things fermented, Katz meditates on his art and work, drawing connections between microbial communities and aspects of human culture: politics, religion, social and cultural movements, art, music, sexuality, identity, and even our individual thoughts and feelings. He informs his arguments with his vast knowledge of the fermentation process, which he describes as a slow, gentle, steady, yet unstoppable force for change."
