We’re going to take a little trip, actually we’re going to follow along with Niall Duffy and his many adventures. In this episode you’ll hear about the Ireland that Niall grew up in and how we had no thoughts of traveling to much less settling down with his wife Jeannie in the United States.
Upon arriving in Richmond, Niall discovered what so many of us have when you travel through or relocate to this part of the world, it’s a pretty neat place. Niall Duffy was born in the West of Ireland in a town outside of the City of Galway called Ballinasloe. His dad was a woodwork teacher, and his mom was a pharmacist. He grew up there and went to college in Galway.
Niall eventually went to North Wales to study Sport Science, and he truly enjoyed that period. He would go on to become Student Union President and that enabled him to take on a project to start a Student Radio Station there called StormFm which is still running!!
Niall has been working at the company that he created, Two & a Half Irishmen since 2014 and they have three sales channels: Local Farmers Markers, Wholesale and Online. Their recipes fit into Four Categories: Traditional Irish, American Classic, Gluten Free Versions and Vegan Versions. Offering over 125 recipes generally available in Half Loaves (Half Pound in weight), which means that they are easily packed and shipped.
