Today’s Recipes:Quick and Nutritious WrapsEgg Salad Wrap Recipe:Ingredients:
  • 3 hard-boiled eggs (use 2 yolks as per the recipe, or include the third for added richness)
  • 1 tablespoon mayonnaise
  • 3/4 cup yogurt
  • 1 teaspoon Dijon mustard
  • Pepper to taste
  • Pinch of salt
  • 2 tablespoons diced onion (red onion preferred, or regular onion as a substitute)
  • 2 stalks of celery, chopped
  • Fresh basil leaves
  • Bibb lettuce leaves for wrapping
Instructions:
  • In a mixing bowl, combine mayonnaise, yogurt, Dijon mustard, pepper, and a pinch of salt. Mix well.
  • Add diced onion and chopped celery to the mixture. Stir until well combined.
  • Cut hard-boiled eggs into small pieces and add them to the bowl. Mix gently.
  • Sprinkle fresh basil on top for added flavor.
  • Take a Bibb lettuce leaf, place a smaller one on top, and either create a cup or roll it up for a wrap.
  • Enjoy your healthy and flavorful Egg Salad Wrap!
Pizza Wrap Recipe:Ingredients:
  • 1/4 cup cherry tomatoes, diced
  • 3/4 cup shredded low-fat mozzarella cheese
  • 1/4 cup turkey pepperoni, cut into small pieces
  • Fresh basil leaves (about 1/4 cup)
  • 1 tablespoon fresh oregano
  • Bibb lettuce leaves for wrapping
Instructions:
  • In a mixing bowl, combine cherry tomatoes, shredded mozzarella, turkey pepperoni, fresh basil, and fresh oregano. Mix well.
  • Take a Bibb lettuce leaf, place a smaller one on top, and layer the pizza mixture.
  • Roll up the lettuce to create a delicious Pizza Wrap.
  • Enjoy this low-calorie and creative twist on a pizza-inspired wrap!
