  Today’s Recipes: Mandarin Orange Salad with Red Wine Vinegar Dressing & Protein Cookie Dough BitesMandarin Orange Salad:Ingredients:
  • 3 cups spinach
  • 2 cups arugula
  • Mandarin oranges
  • Dried cranberries
  • Toasted pecans
  • Shaved parmesan cheese
Instructions:
  • Wash the spinach and arugula thoroughly and pat them dry.
  • Combine the spinach and arugula in a large mixing bowl.
  • Add mandarin oranges, dried cranberries, and toasted pecans to the salad.
  • Sprinkle shaved parmesan cheese on top.
  • Serve the salad on individual plates, allowing guests to add their desired amount of dressing.
 Red Wine Vinegar Dressing:Ingredients:
  • 2 tbsp red wine vinegar
  • 2 tbsp honey
  • 1 tsp Dijon mustard
  • Pinch of salt
  • 2 tbsp poppy seeds
  • 1/4 cup olive oil
Instructions:
  • In a shaker or mixing bowl, combine red wine vinegar, honey, Dijon mustard, salt, and poppy seeds.
  • Slowly add olive oil while whisking or shaking vigorously until well combined.
  • Drizzle the dressing over the salad just before serving, or serve it on the side for guests to add themselves.
 Protein Cookie Dough Bites:Ingredients:
  • 1 1/3 cups lightly salted cashews
  • 1 cup oats
  • 2 scoops vanilla complete protein powder
  • 5 tbsp honey
  • Mini chocolate chips (optional)
  • Almond flour (for rolling)
Instructions:
  • In a food processor, pulse cashews and oats until they reach a flour-like consistency.
  • Add vanilla complete protein powder and honey to the mixture and blend until well combined.
  • If desired, add mini chocolate chips to the mixture and mix thoroughly.
  • Using wet hands, roll the mixture into small balls.
  • Roll the balls in almond flour until fully coated, resembling snowballs.
  • Store the protein bites in an airtight container in the refrigerator until ready to serve.
