John O'Toole keeps 50 ewes on his island Freaghhillaun off the Connemara coast, as well as more sheep and Dexter cattle on the mainland. He is also the head chef at Kylemore Abbey. He speaks to Anne O’Donoghue about island farming and the influence of his mother’s cooking.
