Born and raised in South Texas I can say with confidence that Mexican food is NOT "predominantly vegetarian". Lol. Although onions and garlic go well with cabrito and carnitas and enchiladas and in tacos. No one I know has ever heard of vegetarian guisada either. No offense intended.
