World Iron Awareness Week It’s essential for us to get enough iron into our diets if we want to feel vital and avoid feeling lethargic, unfocussed, or depressed. The most readily available source of iron comes from meat, poultry and shellfish but consuming these food groups is not the only way to boost iron intake; plant based diets are just as likely to satisfy your iron intake.
Here’s some food ideas to ensure you’re getting enough iron:
A steak on a bed of spinach with a squeeze of lemon
Lamb chops roasted with a can of chickpeas + tsp smoked paprika
Mussels steamed and served with chopped green beans, peas and spring onions, with lemon wedges
Vegetarian ideas:
Cook your next cake with molasses
Take 1 cup canned white beans and simmer with a cup of shredded spinach, chives, rosemary and lemon on top
Bread with butter and brewers yeast or marmite
Make a chocolate bark with lots of chopped apricots, pumpkin seeds and quinoa sprinkled on top
